Abstract
The potential of using okara, a nutrient-rich waste product of soy milk production, as a substrate for the production of xanthan gum, a widely used polysaccharide, was evaluated. An okara-based nutrient medium was proposed, and the fermentation process of X. campestris B6720 to obtain xanthan was studied. The cell culture growth, pH change, residual sugar and protein content during the cultivation process were evaluated, and the xanthan gum yield was measured, which was 8.12 g/L.
