PROBLEMS OF PLANNING SCHOOL MEALS IN THE FOCUS OF SOCIOLOGICAL RESEARCH IN THE REPUBLIC OF BASHKORTOSTAN

Abstract
The article analyzes consumer preferences of school menu dishes by children of different ages based on the results of a sociological survey. The relevance of the study is determined by such problems of the school nutrition system as an increased amount of waste and refusal to eat in canteens due to dissatisfaction with its quality. These problems pose a threat to the health of students, and also entail unjustified financial and material costs for organizing meals. The purpose of the scientific study is to identify the features of taste preferences of schoolchildren depending on their age and justify the need to take them into account when planning diets. The study is based on the results of a sociological survey conducted in the Republic of Bashkortostan in May 2024 using the questionnaire method. The study showed that as schoolchildren grow older, their diet becomes broader, nutritional practices become more balanced, and loyalty to products with a specific taste grows. Among students in grades 10-11, they eat almost the entire portion during a meal 10.1% more often, and leave more than half 9.2% less often compared to younger students. At the same time, among all schoolchildren, an imbalance of nutrients for breakfast, insufficient protein consumption, and a general tendency to choose products related to the "poor type of nutrition" were revealed, which indicates the need for educational work with children and parents on the topic of balanced nutrition. The study focuses on the contradiction in the existing standards for planning and monitoring the quality of school meals, which do not take into account consumer demand. The practical significance of the results obtained lies in the justification of the need to adjust the approach to organizing school meals.
