COMPARATIVE CHARACTERISTICS OF WATER-SOLUBLE β-GLUCANS OBTAINED FROM FAR EASTERN BARLEY BY VARIOUS EXTRACTION METHODS

Abstract
This article examines Far Eastern barley as a source of water-soluble β-glucans. The content of these carbohydrates in eight Far Eastern spring barley (Hordeum vulgare L.) varieties was determined. It was shown that a number of varieties have high content of water-soluble β-glucans (>7%) and can be used to produce food products enriched with dietary fiber or to isolate β-glucans for the production of biologically active supplements. A comparative analysis of a gravimetric method for the quantitative determination of β-glucans in grain, which does not require special reagent kits, was conducted with a standard spectrophotometric method. Water-soluble β-glucans were isolated from the Vostochny barley variety, which has a high β-glucan content, using three different methods: alkaline extraction, sodium carbonate extraction, and ultrasound-assisted extraction. A comparative analysis of the obtained polymer samples was conducted using IR and NMR spectroscopy, and their molecular weight was determined using gel permeation chromatography. It was shown that β-glucans isolated by different methods differ in impurity content and molecular weight.
